Three Things; Monday Lunch – Curried Potato Wedges
Today we are trying out some television snack recipes in advance of our grand TV debut on Thursday when we will be on Channel 4, George Clarke’s Amazing Spaces at 8pm. Our current favourite after all of the sweet treats of the last few weeks is a recipe for curried potato wedges.
There are two ways to make these delicious treats, depending on what you have in your store cupboard. Today we made our own curry paste but we have also used shop bought curry paste with delicious results.
To make your own curried wedges you will need.
* A selection of herbs and spices that you like, depending on what sort of curry flavour you want to create. Or a jar of curry paste.
* A good glug of oil
* Potatoes cut into wedges – skin off or on it’s your choice
We used two teaspoons of; coriander, cumin, garam masala, turmeric, chilli and garlic flakes and enough oil to make a runny paste. If you follow our recipe exactly you will end up with very spicy wedges so add less chilli if you like a milder taste.
Just tip the paste over the potato wedges and mess them about until they are covered all over, this can be done by hand or using a utensil of your choice.
Pop in an oven pre-heated to 200C,Gas Mark6, 400F. And cook until the potatoes are soft in the middle and as crunchy as you like. The smaller you cut your wedges the quicker they will be to cook, we cooked ours for about 40 minutes.
You can serve these as a television snack or an accompaniment to a meal. Great for buffets and bbqs we had ours with sausages for tea tonight.
