Almond cake batter (following Nigella’s Easy Almond Cake recipe)
A mini muffin tin
Press pastry rounds into the mini muffin tin
Add a scant teaspoon of mincemeat making sure the pastry case is no more than half full.
Top up the cases with almond cake mixture until they are almost full
Bake until the tops are risen and golden and the pastry is cooked.
These are totally delicious and just marzipan-y enough. If you are a marzipan fiend like Laura you can add amaretto to your mincemeat and even a marzipan star to the top!
