Three Things; Recipe – Banana Muffins
We’re busy getting ready for our photography course this week and the Wirral Open Studio event so we decided to try out some new recipes. One of them was for banana muffins, such a simple mixture that we let our delightful 5 year old do all the work!
You will need:
60g clear honey
1/2 teaspoon of vanilla extract
2 large, ripe bananas
150g plain flour
1/2 teaspoon bicarbonate of soda
1/2 teaspoon cinnamon
12 cake cases
All the ingredients ready to make banana muffins.
We start by melting the butter in a pan with 2 large tablespoons of honey and about 1/2 a teaspoon of vanilla extract. We usually add a little more, but on this particular occasion, it is best described as a small slosh!
Then mash the bananas in a bowl with a fork – the riper the better – this is the fun part.
Mix the flour, cinnamon and dry ingredients in a large bowl. Then add the mashed banana into the pan with the melted butter, and finally pour this into the large bowl with the flour mixture.
The mix goes quite dough-like – spoon it out into the cake cases (another sticky fun part!) and put them in the oven for about 20 minutes at Gas Mark 5 (190ºC). Cool on a wire rack.
And that’s it! Quick, easy, fun to make, and most importantly – extremely delicious. Why not try adding some nutmeg or chocolate chips to the mixture?
